Test Kitchen Thursday-Bread Machine Wheat Bread

by foodstoragegirl 20. August 2009 06:08

If like me, you like fresh homemade bread without preservatives and additives, you’ll love this bread. I’ve tried several Wheat bread recipes and this one is my favorite. The bread is soft but hearty and the taste is mildly sweet without the too bitter wheat taste.

1 1/2 Cups Water
2 T. Powdered Milk
2T. Shortening
2T. Honey
2T. Molasses
1 1/2 tsp. Salt
3 1/3 Cups Whole wheat flour
1 1/2 tsp yeast
secure baking pan. close lid. select: Whole Grain Setting (my machine burns bread in this setting I selected basic bread with light crust and it turned out perfect..) When finished baking, cool on rack so the bottom doesn't get soggy. The outside will be slightly crisp. Enjoy with just about anything!

Can you use this recipe if you don't have a bread machine? Do the amounts change? I'm just not sure how to adapt recipes to equipment or not having equipment and altitude. What altitude do you live at? It makes a difference here.

I live in Arkansas, what adjustment for my area on Tempature, and oven baking?
I have both Bread Machine and dough mixer. The last few times I used my bread machine the bread didn't cook properly so switched to oven baking in winter especially.
I do Prepardness presentations every year, so this bread recipe I want to try ASAP, I also grind my own grain, Can I mix other grains with the hard red wheat and get the same results?
Thank you for posting your recipe.

Sounds and looks yummy!  My bread machine gets bread too dark on the wheat setting, too.  I live in northern Utah--don't know if that makes a difference of not.  I'd be interested to know if others have had success with the wheat cycle before.  I had a wheat recipe I liked that called for sweetened condensed milk--just a couple tablespoons--and I really wanted to adapt it.  Now I don't have to, 'cuz this should do the trick!  Thanks!!!

Thanks so much for your feedback everyone. To answer the questions.
I have no idea how this would work without the bread machine. I do know you can buy used machines for less than $10 or $20 at Goodwill. Mine cost $7.

I don't know what temperature and altitude adjustments have to be made. I live in Florida if that helps any.

As far as using a different type of wheat...I think you'll just have to experiment and see. But please, let us know how it turns out.

Happy storing Everyone.
